Desert Sky, Apache Junction, AZ


I planned on bringing all the fixings for a St. Patty’s Day meal to my daughter Renee’s house.  On the actual St. Patty’s Day, her partner Deb was in NY so we decided to delay celebrating until she could be present.


It was such a pleasant day so Monte and I sat outside to eat lunch. 








          I pre-cooked the corned beef to save time and at 4pm we loaded up the car with all the side dishes (potatoes, carrots and cabbage as well as fresh Irish Rye bread) and headed over to Renee’s house.

By the time she got home at 5:30
 
 
 
 
 
 
 
 
 
 
we were ready to sit down to a real feast. 
 
 
 
 
 
 
 
 
 
 Even Daphne, who is a real finicky eater, enjoyed the meal. 





 

 
After the dishes were done, we took a walk around the neighborhood.

Back home, Monte mounted our outside TV and lit our campfire in a can when the evening turned a little chilly.
